Mini Margarita Cheesecake

  Hello!, I'm in my kitchen again. Thank you for your blessing ^^, I speedy recover this time. 

Well, still feel dizzy for sometime, but I told my doctor that I didn't want to be in the hospital any longer, haha. I know that many people who are Baking Maniacs will understand me. Spending time sleeping (and have nothing else to do is so boring). As I told you from my last post that I have so many, many things to do. Again, thank you everyone, with your word of encouragement, and blessing, I can bake now ^^.
But the easy recipe is the best (well, I'm always looking for something easy to make, hehe). Mini cheesecake seem to be great, plus it's very easy to make too. As I'm not allowed to take the alcohol now, I choose the recipe that's close to it. 
This Mini Margarita Cheesecake filled with lime and a bit of tequila, with one bite you will get delicious salty taste from the pretzel and lightly tangy lime (plus creamy cheesecake). Because it's so small you don't have to wait for hour to bake and chill it, great it's it?
There is a little trick that will make your cheesecake more cute, when remove from the oven use a small knife run around the side of the cake, because the cake will shirk while cooling this trick will prevent the crack.



Mini Margarita Cheesecake 
Makes 12


Base
45g ........................... Pretzel (crushed)
20ml ......................... Melted butter
4tsp .......................... Granulated sugar

Filling
125g .......................... Cream cheese 
40g ........................... Granulated sugar
1tsp ........................... All purpose flour
1/2tsp ....................... Lime zest
1/2tsp ....................... Vanilla extract
1tsp ........................... Tequila 
20g ............................ Egg (mix egg yolk and egg white together then weight)
1tsp ............................ Lime juice

Tequila whipped cream
80g ............................ Whipping cream
8g .............................. Icing sugar
1/2tsp ........................ Tequila

Decoration
.................................... Fresh strawberries
.................................... Lime zest
.................................... Pearl sugar

Preheat the oven to 160C
Brush mini muffin pans with butter.

 Make the base
Mix all the ingredients together.

 Divide and press into the prepared pans.

 Beat the cream cheese and granulated sugar until smooth, add the vanilla and beat to combine.
Add the egg, lime zest and Tequila and beat to combine.
Add the flour and beat to combine.

Pour into the prepared pan and bake for 15-17 minutes.
Remove from the oven and use a small knife run around the side of the cake (this method will make the cake set more evenly)
Let the cheesecake cool completely in the pan. Then refrigerate until firm.
Whip the whipping cream, icing sugar and Tequila together until soft peaks formed.
Decorate the cheesecake with Tequila whipped cream, fresh strawberries, lime zest and pearl sugar before serving.
